I never really thought of the can of tuna in the cupboard as anything other than a handy standby. But all that changed over the past month or so. Beginning when a box of cans that I had ordered from Shines of Killybegs arrived at the house, six cans and two jars!


How could that all be used without us getting fed up of the fish? We did a little bit of research and found recipes in unexpected places. Firstly, Shines themselves have quite a few on their website and it was there that we started.

We picked one by Ciara Shine. Her “Speedy Salad” was described as “a nice fresh dish, easy to prepare. Looks and tastes amazing!” And it lived up to its billing. You can see the recipe here.There are a quite a few items on the list of ingredients but you can pick and choose. Basically you need Shines Wild Irish Tuna (we used the jar) and salad leaves. We added olives and semi-sundried tomatoes and also some of the ORSO Pickled Red Onion (which didn’t make the photo). We were off to a great start.


Another look at the Shine page led to us following, approximately, John Shine’s own contribution: Tuna Mediterranean Wrap. Again, some substitutions were made and our “mix” consisted mainly of Shines Chilli Tuna, lettuce leaves, tomatoes, peppers. Easy to do and worked out well and met John’s description: “Healthy and tasty. Perfect lunchtime treat.”



So what next? Well, the answer was in the post. I had recently ordered The Anti-Cancer Cookbook (an excellent cookbook with all the royalties going to cancer research). A quick flick through on arrival and, without specifically looking for tuna recipes, two turned up. We picked the Tuna and Sweetcorn Fritters, something different, something quite tasty. We added a nice salad to the tuna (Shines Irish Tuna from a can this time) and sweetcorn with a Spicy Ketch-up (by Tipp’s 3 Men in a Trailer). And this surprise recipe turned out very well indeed!



I had read somewhere about tuna being used with Mozzarella and that became our focus for our next dish, another easy one. Yellowfin Tuna belly in olive oil was the chosen can this time - John Shine is very enthusiastic about this particular Tuna, with very good reason as this particular fish is so exquisite you could eat it straight out of the can. A quick trip to the local Dunnes Stores saw us get the Macroom Mozzarella from Johnny Lynch’s farm.

We didn’t need much more, some large tomatoes and basil for the cheese, and a bunch of cherry tomatoes for the salad. It looked nice and tasted even better. Thanks to an internet event, I had just received received the marvellous prize winning Rós Cider (Apple and Rhubarb) from local producer Stonewell. And Rós got on so well with the tuna and the cheese you’d have sworn they were made for each other. 


We still have a few cans of Shines fish left (sardines certainly) but I doubt that we’ll top the Tuna belly, the Mozzarella and the Rós cider combination! Might well do it again soon as there’s still another bottle of that delicious Rós hanging around here.. I think!

Shines Irish Tuna


You can rustle up a lovely lunch in no time at all if you are lucky enough to have a jar of Shines Wild Irish Tuna in your house. This is just one product in an impressive and increasing range from the Donegal family firm and is our Taste of the Week.

This tempting dish is easy to prepare. Looks and tastes amazing! It is based on a recipe by Ciara Shine, one of many on their website. Most of the ingredients on the plate came via NeighbourFood.

The leaves, a lovely mix, came from Purple Squirrel Farm. From Olives West Cork came Freshly Marinated Koroneiki Olives (big plump and superb) and Semi Sundried Tomatoes (big juicy Sicilians that had to be cut down to size with a scissors).  One that didn't it make the photo-call was the marvellous Sweet Pickled Onion from ORSO and it added a delicious kick.

Ali and Patrick are just over 12 months into their adventure at Cinnamon Cottage and the hard-working pair are doing just that, working hard. Much done, more to do, but you can see the difference. The deli has been expanded and the wine selection has been doubled.

And still the work goes on. Fun too. They’re enjoying the run-in to Halloween and you (and the kids, of course!) are invited to the Rochestown cottage for face-painting and balloon animals on the Saturday. And don't forget to get the brack, complete with all the bits and pieces, including that all important ring.

After that it’s Christmas. More work, more fun. And speaking of Christmas, you can already buy your cake. If you don't want a big one, you can get a small one. A slice will suit some people fine and Ali and Patrick do that too. Lots of cakes here, most available by the slice, including the very popular Coconut and Raspberry cake and old favourites like the Victoria Sandwich! And Chocoholics will be in their element!

And they do salads to beat the band, eight to ten freshly made each day, all seasonal. At the moment, look out for the Roast Pumpkin and Butternut Squash with feta and chilli. And then there’s the winter coleslaw. 


On every cabinet, every shelf, there’s something delicious including a few surprises, jams and chutneys and porridge oats. And they have a selection of excellent cheeses, most of it coming via Sheridan’s. Six months back they started doing Kiddies Meals, with no added sugar, no added salt. Choose from a Mild Chicken Curry, Mac n Cheese, Cottage Pie.

You’ll see lots of local produce, beef from O’Connell’s, chicken from Sheehan’s, puddings and sausages and more from Kanturk’s Jack McCarthy, free range eggs and chickens from East Ferry, Shell fish from Dingle, Basil Pesto and Ravioli from Glanmire, popular stone-baked pizza bases made in Ireland by Pizza da Piero, Amodeo dressing from Tuscany Bistro in Limerick, Shine’s Wild Irish Tuna, Green Saffron spices, and the new Irish Tonic Water from Poacher’s in Co.Wexford! And that’s just a handful of what’s available in this treasure trove.

And they bake. Not just cakes but breads and buns. Check out those scones and croissants. In the deli counter, you’ll see artichokes, sun dried tomatoes etc. There’s readymade meals, fresh and frozen, including warming soups, chicken and beef dishes and more, and handy side dishes such as Wholegrain Mash with Gruyere cheese!


You’ll need a good wine to wash down all that food. And again, no shortage here. The Cottage have three main suppliers and that adds up to a big selection, including quite a few organic bottles, getting more and more popular, according to Patrick. I spotted a few favourites: the Pedra da Auga Albarino, the Walnut Blocks and the Gran Martinez Rioja Crianza. 
There is so much more in this lovely place, including Badger & Dodo Coffee; I’ve just barely scratched the surface here. It must be the most productive cottage in Ireland. Well done to Ali and Patrick and their staff on a great 12 months. There are eight regularly employed and, on busy days, that can rise to 15, most of them local.

Shines Wild Irish Tuna

Shines Wild Irish Tuna comes packed tightly in a jar, packed full of flavour too, and is our Taste of the Week.

Use it with a simple salad, as we did, and you’ll get all that delicious flavour of the amazing Albacore Tuna, moist, succulent and meaty. Or you can move up to Tuna-Garbanzo Salad! What’s that? You may well ask. Well, it’s just one of the recipes that Shines provide on their website. Great to see Irish producers give this recipe service.

Shine’s, with 30 years experience behind them, have brought us “this new taste experience”, “Once tasted, always loved.”

Albacore Tuna is a migratory species.  Always on the move, they come within reach of our fishing fleet for only a short period every year.  At the end of August, this fish is caught in very large numbers. Fresh tuna can be enjoyed for just a few weeks each year. But now, thanks to the Shine’s jar, you can prolong the experience. Enjoy.
