TRIGON HOTELS APPOINT FRENCH NATIVE ALEXANDRE PETIT AS GROUP EXECUTIVE CHEF


Alexandre Petit has been appointed as Group Executive Chef of Trigon Hotels. The position is a new role for the Cork-based group which operates The Metropole Hotel and the Cork International Hotel.


The French man has lived in Ireland for twenty years and has extensive experience running busy kitchens at four and five star hotels and fine dining restaurants. Alexandre was born in Paris and spent several years in Brittany before moving to Ireland at the age of 18. 


Alexandre took his first steps into a professional kitchen at the age of 15 when he worked as a kitchen porter. He obtained his Masters Degree in Kitchen Management in Dinard, Brittany. He has worked as a chef for the last 22 years, with senior roles in the Carrigaline Court Hotel, Kingsley Hotel, Hayfield Manor, Oysters Restaurant, Liss Ard Estate and the Celtic Ross Hotel. 


Managing Director of Trigon Hotels, Aaron Mansworth said, “I am delighted to welcome Alexandre Petit to the Trigon team. Food is something we take very seriously at Trigon Hotels and we already have an incredible team of chefs in both The Metropole Hotel and the Cork International Hotel. Alexandre will be collaborating with both teams to elevate our food offering even further.”


Alexandre lives in West Cork with his wife and their three children. He said, “Food and cooking are my passions, I love everything about food whether it’s sourcing new ingredients or trying new trends. For me, it’s really important to use the very best of locally sourced ingredients. It’s all about consistency, supporting small producers and respecting the product. The possibilities are endless when you have the best, freshest and seasonal ingredients. It’s fantastic to work with such a strong team at Trigon Hotels and I’m excited about what we can achieve together.”


Alexandre is passionate about sustainability and has recently joined Chefs’ Manifesto, a global network of chefs exploring how they can help deliver a sustainable food system.


He added, “Trigon Hotels is committed to minimising the impact its hotels have on the environment and it has a strong track record in this area. I’m really looking forward to playing my part and getting involved with Chefs’ Manifesto and learning from others about how to make a bigger positive impact. We all want a food system that is less wasteful, more nutritious and driven around sustainability.”

TRIGON HOTELS TOP THE BILL ON ‘OPERATIONAL EXCELLENCE’


Cork group’s team delighted to see ‘massive efforts’ rewarded


 




Trigon Hotels has claimed victory at Ireland’s inaugural Operational Excellence Awards. The group, which includes the Metropole Hotel, the Cork International Hotel and the Cork Airport Hotel won the Hotel and Leisure category and were finalists in the overall Operational Excellence Award division.

 

The awards developers, Business River say the programme aims to recognise and reward those committed to ‘operational excellence and business transformation’. In their submission to the judges, the Trigon hotels team highlighted how both of these topics were priorities for them over the past 18 months. 

 

Since establishing a company-wide COVID-19 committee at the start of 2020, Trigon Hotels has led the way in adopting necessary health provisions and transforming their business to cope with the great upheaval its industry is still enduring.

 

The three hotels also devised new and innovative ways of being part of their respective communities, like afternoon tea deliveries, a takeaway cafe service, online cocktail demonstrations and a wide range of other digital offerings via the ‘Hotel at Home Hub’.

 

Trigon Hotels has also been busy on the Health and Safety and Sustainability front. 2020 saw the group recruit a Health and Safety coordinator and each of the three hotels now also has a trained Mental Health First Aider. The group’s Greening & Sustainability working group has been in place for 12 months.

TRIGON HOTELS GIVES A DAY OFF TO THE TEAM AS A “THANK YOU”


 

National Workplace wellbeing day will take place on Friday 30th April 2021. At Trigon Hotels, wellbeing in the workplace has always been of paramount concern and to celebrate Workplace Wellbeing Day, all team members are being gifted a ‘Wellness Day’ to enjoy such much needed R&R as a gesture of gratitude by the company’s Managing Director, Aaron Mansworth (pictured above).


In a year like no other, with the hospitality industry being so severely impacted by Covid 19, the mental and physical wellbeing of the team was of critical importance. 


Throughout this past year, there have been a variety of initiatives to support the teams across the Cork International Hotel, the Cork Airport Hotel and the Metropole Hotel. Some of these include the Trigon Team Support Hub, which is an internal hub which has provided direct access to the various supports that have been needed during Covid 19 – including mental health supports, financial advice, wellbeing supports and so much more. 


The hotels have also hosted some fun events including zoom bingo, a virtual Halloween party for the children of team members and a virtual awards ceremony. They are currently in the process of organising their ‘Trigons Got Talent’ so their team members can show off their secret talents to their colleagues.


Managing Director of Trigon Hotels, Aaron Mansworth said: “This past year has been incredibly challenging for so many people, and in particular at industry level, within the tourism and hospitality sector. The team have overcome many hurdles in order to protect the business and livelihoods and for that I am immensely grateful. They collectively worked in order to change the way that we do business in order to stay connected to our guests and communities. I am so proud of each team member and grateful for their commitment, hard work and dedication. As a gesture of thanks, I am delighted to gift each team member a ‘wellness day’. They can use this paid days leave any way they wish so whether it’s a day outdoors in nature or a day on the sofa, once they get to recharge their batteries and relax”.

We are used to the cheese course at the end of the meal. But this one came at the end of a meal in Olivo, the restaurant at the Cork Airport Hotel, the host venue for the inaugural Cork Cheese Week, a meal in which all the previous four courses had been based on cheese. Were we stuffed? No. Our four local chefs got the quality and the quantity just right and we enjoyed a delightful meal that brilliantly illustrated the variety of texture and flavour available in Irish cheese today.

Delighted too to share this meal with Helene Willems. Helene with her husband Dicky were among the pioneering Irish cheesemakers, setting up in Coolea about 40 years ago. Now the second generation carry on the business at the same high standard, leaving Helene and Dicky plenty of time to enjoy life on the road in their beloved camper-van! 

Stracciatella

Appropriate that Helene was with us at the Gouda table! As was another superb Cork cheesemaker Padraig O’Farrell of Carrigaline Farmhouse whose mother and father started their cheese-making business over 30 years ago.

The innovative Toons Bridge Dairy featured in our Amuse Bouche, a delicious Stracciatella with picked cherries and candied walnuts by Fran Jara who has just completed a six month course at the famous Basque Culinary Centre in San Sebastian, “well worth every cent,” she told me as we sipped some lovely bubbles as the guests gathered.
Soufflé

Quite a few were associating cheese meals and heaviness but the opposite was the case with our lovely starter by Kate Lawlor, a soft and delicious Twice Baked Bluebell Falls goats cheese soufflĂ© with a Hegarty’s Cheddar glaze with beetroot carpaccio. 

Pam Kelly’s main course was naturally more substantial, quite a tour de force actually. The Gubbeen pork was the star of the plate of course which also featured Coolea and Rockfield (sheep) cheeses with an excellent apple and parsnip sauce.

Our chefs were rocking it and the dance continued with a flower bedecked dessert from pastry ace Christine Girault, now dividing her time between Cork and Paris. Her “tarte aux fruits” looked well and tasted even better.

By now, the generous servings of wine were being replaced by coffee though not before we sampled the cheese board with Coolea, Cashel Blue, Carrigaline, Hegarty’s Smoked Cheddar and Gubbeen all featuring. And the hotel continued to spoil us with a selection of petit fours! Quite a night ahead of two working days for the cheese makers as they were due to meet the punters for tastings and workshops on today Saturday and Sunday, starting at 11.00am each day. A change is as good as a rest. They say. And it worked well for us at Olivo, the Italian restaurant in the Cork Airport Hotel. I was impressed with their contribution to the Cork Gourmet Trail late last year and, armed with a “two main course for the price of one” from that event, we headed out there the week before last. 

Before arriving, I had more or less settled on my mains: Pizza di Cork with tomato sauce, Clonakilty black pudding, crispy bacon, red onion and Ballymaloe relish (€16.00). And I wasn't at all disappointed. It was excellent, a perfect combination of tastes and flavours, amazing how well the black pudding and relish combined. The base was fine and the red onion also played a key sweetening role. Pizza di Cork was a star.
Hake
And across the table, the Nasello, oven baked fillet of hake with roasted courgettes, peperonata and basil pesto (18.00) also proved a winner, proving that you don't need a creamy sauce to get the best from fresh fish.

Olivo is a spacious comfortable casual restaurant for residents and walk-ins alike. There is a bar area, a couple of big screen TVs over the drinks selection (spotted a few bottles there from Torc Brewing in Killarney), a dining area, and an adjoining breakfast space, all sections nicely laid out and lit. The wine list by the way is already on your table - check out that bottle (back and front).

The menu, with a Specials insert, is laid out in typically Italian fashion. You have a good choice of Antipasti and Salads. Pizzas, of course, and also Contorni (sides) which range from a Fresh Garden salad to Hand Cut Fries. No shortage of Pasta dishes either - I was tempted by the Cannelloni. And then there’s meat and fish, including chicken dishes, hamburger, lamb shank and sirloin steak.

We started off with a couple of the Antipasti. CL’s Bruschetta al pomodoro was Tomato, garlic & basil, with rocket & parmesan (8.00). Quite a plateful but easy to eat and delicious. 


My pick was the Melanzane ripiene: stuffed aubergine with mozzarella and sun dried tomato pesto (7.00). Another delicious and surprisingly moist plateful, another substantial starter.

Service was friendly, casual but efficient. Nice spot if you’re in the area and looking for “a change”! And if you want a rest, well then you can stay overnight! Parking, by the way, is free for restaurant customers.
