With its eye-catching label art, the producers of this Spanish white wine exhort us to “enjoy it wherever, however, and with whomever you want.” And indeed, that kind of “permissiveness” applies to its making. Gallina de Piel does not have a vineyard but works “with local growers, selecting the best vineyards planted with indigenous grape varieties to create wines that emphasize elegance and freshness.”
Gallina de Piel is an exciting winemaking project by David Seijas, the former Head Sommelier at the three Michelin-starred restaurant El Bulli. David aims to create versatile wines from Spain’s gastronomic northern regions: Catalonia, Aragon, and Galicia.
‘Ikigall’ is an aromatic, organic white blend of Xarel-lo (85%), Malvasia de Sitges (10%), and Muscat (5%) from Penedès. It is fermented in stainless steel and aged on its fine lees for four months to enhance mouthfeel and retain freshness.
Mid-straw is the colour. Fragrant for sure, floral and citrus (lime). Immediately, you note that tingly feel at the tip of your tongue, a crisp and saline feel that persists right through to the finish. Citrus flavours are subtly influential in this fresh and rather elegant white. Very Highly Recommended.
Ideal to enjoy by the glass (served at 10 to 12°C), with any snack or with cold food. David (who should know!) suggests a Xató, a grilled Catalan salad with a bright and nutty romesco-style sauce typical of Penedès. If you’d like to try it out, there’s a recipe from a Barcelona paper here.
